Easy, Plant-Based Meal Prep with Resources to Help You!
One of the best ways I’ve found to encourage healthy eating for myself is meal prepping, even just a little bit on the weekend or whenever I have time. However, finding the recipes and making the grocery list is always a hassle and can be discouraging. To help with this issue, I’ve started making meal prep videos with accompanying ebooks that do all of the legwork for you – finding the recipes, making the grocery list, and making the schedule of what to eat and cook and when!
I’ve now released two meal prep videos that you can find on my YouTube channel – Two Shakes of Happy! The first one did so well (it has over 90,000 views!), that I decided to make another one. The second video is below. Both videos feature recipes that are plant-based, healthy and delicious! Some of my favorite recipes featured in the second video are the Eggplant & Kale Lasagna, the Bean Tostadas with Avocado Kale Slaw, and the Classic Chili with Saltines.
Try a Few Recipes at a Time…
Doing the entire week of meal prep is an undertaking and could be too much if you’re new to cooking. However, the recipes are fairly simple and use a lot of overlapping ingredients, so you might consider trying out a couple at first to see how it goes if you’re short on time or new to cooking!
The Resources Available
I have made two extensive, week long meal prep videos. For both videos, I tried to choose recipes that would be satisfying for new plant-based foodies but also still approachable! I use the same ingredients in multiple recipes, so you save money and cut down on food waste and I try not to use too many specialty ingredients. Meal Prep with Me 1 has simpler recipes with less ingredients, whereas Meal Prep with Me 2 (the video above) features slightly more complicated recipes but with an emphasis on comfort foods like lasagna and chili!
